Easy Tom Kha Gai (Chicken and Coconut Soup)

Soup

  • 450 grams chicken breast
  • 1 medium size red chilli, deseeded
  • 25 grams lemongrass
  • 1 centimetre ginger
  • 2 cans coconut milk, (Tin)
  • 6 Kaffir lime leaves
  • 1 teaspoon raw sugar
  • 20 grams fish sauce
  • 2 1/2 heaped tablespoons lime juice
  • 1 bunch handful fresh coriander
  • 100 grams fresh brocolli, big pieces

Recipe's preparation

    Soup
    1. Place the peeled ginger, lemon grass (Cut in big pieces) into TM bowl and chop for 4 seconds  on speed 7. Use spatula to scrape down sides and chop for further 1 second on speed 7.
    2. Add chilli and chop for 2 seconds on speed 7
    3. Add coconut milk, fish sauce, lime leaves and sugar and cook for 10 minutes at 100 degrees on speed 1
    4. Add cubed chicken and cook for 2 minutes at 110 degrees on Reverse + speed soft
    5. Add sliced brocolli and continue cooking for another 7-8 minutes
    6. Add lime juice and stir through for 3 seconds on reverse + speed soft
    7. Transfer to a large serving dish and sprinkle coriander.
