FODMAP friendly Lemon and coconut chicken soup
- 3 centimetres ginger, Fresh
- 2 Red Chillies, Seeds removed (optional)
- 1 teaspoon tumeric
- 1 bunch fresh coriander
- 3 shallots/spring onions green ends only
- 2 tablespoons low FODMAP stock paste, Chicken or vegetable
- 1 litre water
- 30 grams lemon juice
- 400 grams coconut milk
- 2 tablespoons raw sugar
- 2 tablespoons fish sauce
- 300 grams cooked chicken

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Chop ginger, handful coriander, green onion ends and 1 chilli
5 seconds/speed 7 - Add stock paste and water
Cook 10 mins/100 degrees/speed 1 - Add remaining ingredients except chicken
Cook 10 mins/100 degrees/speed 1 - Add cooked chicken
Cook 2mins/100 degrees/speed 1 Reverse - Serve with sliced chilli and coriander to taste.

Delicious soup.👏👏 I used a 270g can of coconut cream and topped up with water and cooked my chicken cut into small pieces in the soup for final 10 min.
I'll drop the sugar back to 1 1/2 tablespoons next time. 😋
