Jame Oliver's Chickpea and Leek Soup

  • 2 cans Chickpeas drained, approx 450g after drained
  • 1 medium potato, peeled & diced
  • 480 grams leeks, approx 4 Leeks
  • 20 grams olive oil
  • 20 grams Butter
  • 2 cloves garlic
  • 2 tablespoon vegetable stock
  • 30 grams Parmesan cheese
  • 800 grams water
  • salt & pepper, to taste

Recipe's preparation

  1. Rinse chickpeas & set aside.  Chop parmesan cheese on speed 5 10 secs set aside.

     

    Put in your garlic and leeks and chop on speed 5 for 10 secs.   Add potato, olive oil and butter and cook on Varoma temp for 5 mins.  Add chickpeas and cook on Varoma temp for 2 mins speed 1.  Add water and stock and cook for further 15mins 100 deg speed 1. 

     

    Puree soup to the consistency you like.  I pureed mine for 1 1/2 mins speed 9 but go up slowly as the bowl is hot & full.  Add parmesan then season to taste.  To serve you can drizzle evoo over your soup with cracked pepper and an extra sprinkling of parmesan. This would also be yummy served with Pizza Bianca or Fresh bread rolls.

Tip

If you want to use dried chickpeas you will need to soak in cold water overnight then cook first with the potato before you start the recipe. Cover with fresh water & boil until tender Counter-clockwise operation varoma temp 15 mins or until tender (it says an hour on the stove)

    I made this using soaked dried peas as in the tip. I soaked 450g of dried peas but only used half of this amount, they must have doubled their weight while soaking. This turned out well but we found the taste to be very bland.
