Keto Cauliflower and Zucchini Soup

  • 65 g onion, Halved
  • 2 clove garlic, Peeled
  • 500 g cauliflower, Cut in pieces
  • 260 g zucchini, Cut in pieces
  • 1 heaped tsp fresh thyme, Leaves only
  • 1/2 tsp Onion powder
  • 130 g cream
  • 2 stalks Celery, Cut in pieces 3cm
  • 2 heaped tablespoons ghee or butter
  • 500 g water
  • 2 heaped tablespoons vegetable stock, To taste
  • to taste Salt and pepper
  • olive oil, To serve

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. 1. Place onion and garlic in mixing bowl. Chop 5seconds, speed 3.
    2. Scrape down sides of the bowl
    3. Add ghee and saute for 3 minutes, varoma, speed soft.
    4. Add cauliflower, zucchini, celery, onion powder, stock paste, water, thyme, salt and pepper and cook for 20 minutes, 100degrees, speed 1.
    5. Add cream and cook for another 5mins, 100degrees, speed 1.
    6. Blend for 90seconds increasing speed gradually from 5 to 9.
    7. Serve soup hot with thyme, drizzled olive oil and drizzled cream if desired
    (And cheesy pull apart bread- delicious)
