LCHF Creamy Mushroom Soup

  • 50 g Butter
  • 2 cloves garlic
  • 100 g leek
  • 300 g mushrooms, roughly chopped
  • 30 g TM vegetable stock
  • 400 g water
  • 1/4 tsp cayenne pepper
  • small handful flatleaf parsley
  • 350 g double cream
  • pepper to taste
  • Sour Cream and Fresh Parsley to serve

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Mushroom Soup
  1. Add butter, garlic and leek to the bowl. MC on. 5 seconds, speed 9. Scrape down bowl.

  2. Add mushrooms. MC on. 10 seconds, speed 7. Scrape down bowl.

  3. MC on. 5 minutes, Veroma, Speed 3.

  4. Add stock, water and cayenne pepper. MC on. 20 minutes, 100 degrees, speed 3.

  5. Add parsley. MC on. 8 seconds, speed 7.

  6. Add pepper and cream. MC on. Speed 4 for 10 seconds.

  7. Garnish with sour cream and fresh parsley.

    Used my TM31 and no trouble with quantity.
    Used brown onion and 200gms Longlife Australia Own cream. I did add 125gms cream cheese, but found it was too creamy for me. Will omit cream cheese next time. Was so easy to make for lunch. Will make again.

    YUM! I used a brown onion instead of the leek, and I used a combo of sour cream/cream cheese/pure cream and yoghurt to make up the 350g.

    Will definitely make again.

    I slightly change the recipe to suit my dairy free toddler, by leaving out the cream and sour cream, and left out a little bit of the water and replaced it with soy milk. Still tasted amazing, and my toddler loved it too.
