Lettuce Soup

Ingredients

0 portion(s)

  • 500 g water
  • 1-2 tablespoon TM stock concentrate
  • 8-10 leaves lettuce (butter or gourmet works best), roughly chopped
  • 1-2 spring onions/shallots, roughly chopped
  • 30 g Butter
  • 1 large potato, peeled and roughly chopped
  • to taste Salt and pepper
  • 1 teaspoon sugar, (optional)
  • 1 MC of cream or yoghurt
  • fresh mint to garnish

Recipe's preparation

  1. Place 400g water, stock, lettuce, spring onions/shallots and butter into mixing bowl and mix for 10 secs/speed 9.

  2. Add potato and cook for 15 mins/100C/speed 2.

  3. Check potato, If cooked add salt, pepper, sugar, cream and remaining water and puree for 30 seconds by slowly going from speed 1/speed 9.

  4. Garnish with mint leaves.

Tip

This can easily be pre made and left in the fridge for up to 3 days in advance. Simply reheat or serve cold!

    I had some leftover cos lettuce and wanted to use it up. Had some sad shallots and leek so combined the two. Didn't have white potato, so used sweet potato. Used Greek yoghurt instead of cream, and added garlic. Added some chicken stock powder, and next time might throw in some curry powder, but I'm quite happy with the taste and overall result.

    Hi Kerrie,

    Any fruit and veg shop should have butter lettuce it's a mid to bright green colour and the leaves are large and sort of floppy and sort of wavy and about the thickness of baby spinach - hope that makes sense! I am just about to try it but only have iceberg - will see how it goes! I might just reduce the water or increase the potato. Put it all in quickly before anyone sees the lettuce going in lol!

    I ended up using the 500ml of water at the beginning and it turned out fine! Got inspiration to do it after the Festive Flavours cooking class last night- will definitely be making it again, even if it is approaching Summer! tmrc_emoticons.;)

    We suggest using gourmet or butter lettuce.  Iceberg lettuce has a higher water content and may not work as well.

    No idea, to be honest, Kerrie. I just use the nearest available soft, small-leaf lettuce - whatever is leftover from the salad, or in the fridge.  I guess I just equated butter with soft as the supermarket people had never heard of butter lettuce.
