Tasty and healthy. A little salty (just from the concentrate). Will do again if I have leftover lettuce. Very quick and easy

    Submitted by kirbygail on 21. March 2013 - 19:04.

    Hi Kerrie,

Any fruit and veg shop should have butter lettuce it's a mid to bright green colour and the leaves are large and sort of floppy and sort of wavy and about the thickness of baby spinach - hope that makes sense! I am just about to try it but only have iceberg - will see how it goes! I might just reduce the water or increase the potato. Put it all in quickly before anyone sees the lettuce going in lol!

I ended up using the 500ml of water at the beginning and it turned out fine! Got inspiration to do it after the Festive Flavours cooking class last night- will definitely be making it again, even if it is approaching Summer! ;)

We suggest using gourmet or butter lettuce.  Iceberg lettuce has a higher water content and may not work as well.

No idea, to be honest, Kerrie. I just use the nearest available soft, small-leaf lettuce - whatever is leftover from the salad, or in the fridge.  I guess I just equated butter with soft as the supermarket people had never heard of butter lettuce.

same as below...tried this at a cooking class and really enjoyed it.  DO NOT add any salt as the stock concentrate is more than enough (not overpowering though).  Enjoyable, easy dish

I love this soup.  It was introduced to me at cooking class, and I've made it quite a few times. It goes down very well at our place.  Thank you.  :)
