Moroccan Carrot Soup

Ingredients

4 portion(s)

Soup

  • 7 carrots, sliced
  • 1 onion, quatered
  • 1 clove garlic
  • 1 chargrilled red capsicum, home made or from a deli or 1 Tbs Smoked Paprika
  • 1 tablespoon middle eastern spice blend or paste
  • 500 grams home made stock, or 1-2 Tbs EDC stock concentrate and water

Garnish

  • Meredith Cherve in oil, (soft goats cheese)
  • mint sprigs, use the small ones at the tips of each stalk
  • black pepper, freshly ground over
  • sea salt, to taste
  • olive oil, or oil from the cheese

Recipe's preparation

    The Soup
  1. Combine all the ingredients in the mixing bowl and cook for 25 mins./100C.

  2. Puree by carefully and slowly increasing to speed 9 for 1 minute. 

  3. Garnish
  4. Serve your soup garnished with pieces of goats cheese, sprigs of mint, ground pepper and salt to taste. Drizzle over oil from the cheese or olive oil if you have cheese that is not marrinaded in oil.

Tip

This can easily be made with pumpkin, zuchini or tomato.

    I had no capsicum in the cupboards, so swpped this for char grilled cherry tomatoes, also added 1 medium potato, made my own middle eastern spice blend...this is an awesome soup, really healthy too!!

    So easy and yummy. Great tasting soup that also felt light to eat and not creamy and heavy. I added curry powder along with the other spices. The family really enjoyed it. Thank you

    Lovely soup! I didn't have a morroccon seasoning but added cumin coriander tumeric chilli powder and some ground ginger. Lovely with some creme freche or natural yoghurt!

    First soup I have actually made in my thermie.. Cooked it for lunch for me and the kids today and Miss 4 said: "the bestest yuckiest soup ever!" No offence, I have no idea at all what she meant but I really, really liked it!! Five stars

  • I made this for a friend

    I made this for a friend who'd had teeth out and it was a bit hit. 

    I roasted zucchini in with the capsicum and didn't have paprika or Moroccan spice so used turmeric and curry powder In their place!! Also added two potatoes with the carrots 

    it was beautiful. 

    Served with sour cream yum

    I made this, I char grilled the red capsicum while bringing the rest of the ingredience together. I used TM veggie stock and added a small seedless red chilli and served with a dolope of natural yogurt, absolutely beautiful soup.  Yum!!!!
