Mushroom soup

Ingredients

6 portion(s)

  • 1 --- small brown onion, peeled, halved
  • 2 cloves garlic
  • 2 Med carrots, roughly chopped
  • 2 pieces Celery, roughly chopped
  • 20 g olive oil
  • 200 g sliced mushrooms
  • 20 g Butter
  • 3 chicken wings
  • 1 tbsp porcini powder
  • 2 tbsp TM stock
  • 1000 g water
  • 100 g risoni pasta
  • Salt & pepper to taste
  • cream or creme fraiche to top
  • fresh dill to garnish

Recipe's preparation

  1. To make mirepoix:

    Chop garlic and onion 3 sec/ sp 5

    Add celery & carrots and chop 5 sec/ sp 5 add oil and sautee 3 min/ VAROMA/ sp 1 with MC removed

    Add mushrooms, porcini powder and butter and sautee a further 3 min/ 100C/ sp1 with MC removed

    Add TM stock, water and chicken wings to TM basket, and cook 15 min/ 100C/ sp 1

    Remove TM basket with cooked wings add pasta and cook 11 min (or asper instructions on packet of pasta)/ 100C/ REVERSE/ sp 1

    Season with salt & pepper to taste and serve with a dollop of cream or creme fraiche and fresh dill

    You can also shred the chicken meat and add to the soup...

    Wow that dish got massive thumbs up from the family.our 3 year old only eats cornbeef & he thought was the best.sauce was awesome, I added just a little pepper & cheese at the end would have been slightly too salty for kids But I loved it.

    we have some sauce left over is it ok to freeze for next time we have this to save more time? Thanks nikki
