Nonna's Chicken Soup

Ingredients

4 portion(s)

  • 1 brown onion, halved
  • 1 clove garlic
  • 1 carrot, quartered, and peeled if you wish
  • 1 tomato, quartered
  • 30 grams olive oil
  • 750 grams water, enough to cover chicken legs
  • 6 chicken legs, skinless
  • 2 tablespoon vegetable stock concentrate
  • 150 grams angel hair pasta, broken

Recipe's preparation

  1. Add onion, garlic, carrot and tomato, chop for 5 seconds speed 5.
  2. Once done, use spatula and push to bottom of bowl.
  3. Pour in oil, cook for 3 minutes, varoma, speed 1
  4. Put water, vegetable stock concentrate, and chicken legs in, cook for 20min, 100 degrees, reverse, speed spoon.
  5. Put water, vegetable stock concentrate, and chicken legs in, cook for 20min, 100 degrees, reverse, speed spoon.

    Check after 20 minutes that the chicken is cooked and falling away from the bone.
  6. Take out chicken legs. Separate the meat from the bones, discarding the bones and adding the meat back to the soup.
  7. Add in the angel hair pasta, cook for 6 minutes, 100 degrees, reverse, speed spoon. Check that pasta is cooked, add a couple of extra minutes if necessary.
  8. Serve.

    My daughter is sick at home and I just made this and it was amazing - quick, simple, wholesome. This will now be my chicken soup recipe. I am new to thermomix and not having much success with grt recipes but this one has changed it.
