Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation
- - Clean & roughly chop leeks into 2" pieces
- Put leeks into bowl
- Chop on speed 5 for 4 seconds. Then scrape down sides with spatula & add 1 tablespoon butter
- Saute for 6 minutes/60°C/1 until soft
- Roughly chop the streaky part of the bacon and add to the leeks & continue to saute for 5 minutes/60°C/1. Reserve the bacon eyes for later.
- Add 500g cubed potatoes & stock.
- Cook 30 minutes/90°C/2
- In a fry pan cook reserved eyes of bacon, then chop into small pieces
- Check the potatoes are tender & blitz until smooth, then add the extra bacon and stir through. Serve hot with fresh bread.
