Pumpkin and Leek Soup

  • 50 g extra virgin olive oil
  • 1/3 tsp curry powder
  • 900 grams pumpkin flesh, chopped in 1.5cm peices
  • 100 grams leek, sliced
  • 2 tsp Himalayan salt
  • 3/4 tsp freshly ground pepper, or to taste
  • 100 grams coconut cream, full fat

Recipe's preparation

  1. Place oil and curry powder into bowl saute 1 min/90 degree/sp 1
  2. Add pumpkin, leek, salt, pepper and water to just the max line.
  3. Remove MC and cook for 20 mins/100 degrees/sp 2
  4. Pour in coconut cream. Place on MC and blend soup gradually increasing speed from speed 4 to speed 9 for 1 min/sp 9
