Pumpkin & Coppa Soup

Ingredients

4 portion(s)

Soup

  • 800 g Peeled and roughly diced Pumpkin
  • 120 g Diced Coppa
  • 1 medium onion, quartered
  • 2 tbsp veggie stock
  • 2 tbsp fresh parsley
  • 2 tbsp fresh thyme
  • 1 tbsp Dijon mustard
  • 600 g water
  • 2-3 garlic cloves
  • Salt, Parmasen and cream to taste
  • 30 g olive oil

Recipe's preparation

    Soup
  1. Chop Onion, Garlic and Herbs for 5 sec on speed 7.

     

    Add oil and Saute Coppa, Onion and Herbs for 3 min, 100 dec, speed 1.

     

    Add pumpkin, stock, water, salt and cook for 18 min, 100 dec, speed 1.

     

    Once cooked, add mustard and desired amount cream and blend for 10-20 sec, working slowly to speed 9.

     

    Serve with sharved Parmesan.

Also can substitute Coppa for Pancetta or Bacon, depending on preference.
