Pumpkin Soup with Peanut Butter

Ingredients

  • 2 onions
  • 50 g Butter / oil
  • 600 g pumpkin
  • 500 g chicken stock (or water with 1 Tblspn veg stock concentrate)
  • 1 tablespoon brown sugar
  • 2 tablespoons Peanut Butter
  • bay leaf
  • white pepper, to taste

Recipe's preparation

  1.  

    Chop onions 5 secs, speed 7

    Add butter, sauté 3 mins. 100 degrees, speed 1 MC OFF

    Add pumpkin, chop 15 secs, speed 7

    Add remaining ingredients

    Cook 20 mins, 100 degrees, speed 1

    Blend 1 minute by SLOWLY increasing speed from 1 to 9.

    Adjust seasoning.

    Wow, amazingly delicious.
    I added ginger garlic and chili at step 1. will no make plain boring pumpkin soup again.

    This was a nice variation on a tradtional soup. The only problem i had was the texture, i like mine really smooth so i blended it for another 30 sec.
