Riso e Patate (Rice & Potato) Soup

  • 50g Parmesan cheese, Grana Padana (optional)
  • 1 Large Brown Onion, halved
  • 50g olive oil
  • 600g potatoes, 2-3cm cubes
  • 100g rice, rinsed
  • 2tbls TM vegetable stock
  • 600g water

Recipe's preparation

    METHOD
  1. Place Parmesan into mixing bowl and grate 10 sec/speed 9.  Set aside. Rinse and dry TM bowl.

     

    Place onion into mixing bowl and chop 3 sec/speed 7.  Scrape down sides of bowl.

     

    Add oil and saute 5 min/Varoma/speed 1.  

     

    Add potatoes and saute 10 min/100deg//.

     

    Add water, TM stock and rice and cook 15 min/100deg//.

     

    Pour into ThermoServer.  Season to taste and stir through reserved Parmesan (if using).  Allow to rest for a minimum of 5 minutes before serving.
