  • 1 onion, small
  • 20 grams Evoo
  • 10 grams Butter, optional
  • 1 carrot, rougly chopped
  • 1 potato, peeled and roughly chopped
  • 300 grams butternut pumpkin
  • 1/2 tsp Ginger, ground
  • 1/2 tsp cinnamon ground
  • 10 grams honey
  • 1/4 tsp smoked paprika
  • 500 grams water
  • 130 grams Milk
  • 2 tsp veg stock from EDC

Recipe's preparation

    soup
  1. Put onion into TM bowl and chop speed 4-5 for 3 seconds.

    Add EVOO and butter and saute for 2 minutes at 100c

  2. Add carrot, potato, butternut, ginger and cinnamon, saute at speed 2 at 100c

  3. Add water, honey and vegetable stock Cook for 20 minutes at 100c speed 2

    Then Blend 15-20 seconds starting slowly 1-9

    Then add Milk and paprika check temp is above 70 and then serve with sour cream and sprinkly of paprika.

    Lovely recipe thank you. I reduced cinnamon slightly as per other comment and also used only 400g water and 100g cream instead of milk as I like my soup a bit thicker and richer. Was beautifully creamy and very tasty!
