Tomato & Capsicum Soup

Ingredients

2 litre(s)

Soup

  • 3 cloves garlic, Peeled
  • 1 small red chilli, De-seeded and chopped in half
  • 1 leek, Roughly chopped
  • 300 grams water
  • 30 grams Butter
  • 30 grams Vegetable Stock - TMX
  • 400 grams fresh tomatoes, Quartered
  • 3 Capsicum, Roughly Chopped
  • 1 Sweet Potato (Kumera), Peeled and roughly chopped

Recipe's preparation

    All in one!
  1. Add garlic and chilli to your thermomix bowl, MC Speed 7, 4secs

  2. Scrape down the sides.

    Add leek (roughly chopped) into the bowl and chop with MC on, Speed 7, 4secs.

  3. Add 30g of butter and saute for 4 minutes.

  4. Add capsicum, kumera, tomato, stock and water.

    MC, 100 degrees, Speed 2, 20min

  5. Once finished, add basil and blend up from speed 1 to speed 7 slowly for 20 seconds or whenever it is completely mixed.

    Serve.

Tip

This would also be great using royal blue potatos because they would add a creamy taste and texture.

Always peel, chop and soak kumera/potatos first, prior to preparing other ingredients. It will take a lot of the starch out of your soup!
