Variation Best Ever Pumpkin Soup

Soup Ingredients

  • 1 brown onion
  • 1 clove garlic, peeled
  • 2 cm peeled Fresh Tumeric
  • 20 grams olive oil
  • 400 grams pumpkin
  • 400 grams sweet potato
  • 200 grams Veg (Carrot, Cerely, Zuchinni)
  • 2 tablespoons vegatable stock paste
  • 1 teaspoon paprika
  • 600 grams water

Recipe's preparation

    Soup
  1. Add Onion, Tumeric and garlic to bowl, chop - 7 sec/sp 5

    Scrape down sides of the bowl and add olive oil and cook for 6 min/varaoma temp/sp 1

    Chop Pumpkin, Sweet potoato and extra Veg into chunks (approx 4x2cm)and add to the bowl once onion is cooked.

    Add water, stock, & paprika. Cook for 20 min/sp 1/reverse/ 100 deg.

    Make sure vegatables are soft (if not cook for another 5 min) and the blend 1 min/speed 5 gradually increasing to speed 9.

    Serve with a spoonful of Natural Yogurt, and a sprinkle of Cinnamon and Nutmeg!

Tip

Suitable for TM 31 and TM5

This recipe is very versatile, you can increase the quanity of pumpkin and sweet potato, if you do this fill the bowl with water to approx 5 cm below where the vegetables come up to.

If you are using a soft skin pumpkin you can keep the skin on and use the seeds however you may need to blend a little bit longer.
