Weight Watchers "Pumpkin and capsicum soup"

  • 20 grams olive oil
  • 2 --- brown onions, Peeled, halved
  • 950 grams butternut pumpkin, Chopped into chunks (leave seeds in and skin on)
  • 1 red capsicum, Roughly Chopped
  • 1 tablespoon Vegetable stock paste
  • 650 grams water
  • 160 grams skim milk
  • 1 tablespoon fresh chives, Chopped
  • 4 tablespoon Plain diet or no fat yoghurt

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

    Pumpkin and Capsicum Soup
  1. Add borwn onions and garlic to the mixing bowl, chop for 3 sec / Speed 5

    Scrape down sides with spatula

  2. Add oil and sauté with MC off for 3 mins / 120 deg / speed 1

  3. Add pumpkin and capsicum, chop 15 sec / speed 7

    Scrape down sides with spatula

  4. Add water and stock paste, cook for 20 mins / 100 deg / speed 1

  5. Add skim milk and blend for 1 min / speed 5-9 increasing speed gradually.

  6. Divide evenly between 4 serving bowls, add a dollop of yoghurt and sprinkle with chives. Serve immediately.

My adaptation of the Weight Watchers recipe, "Pumpkin and Capsicum Soup"

Don't be afraid to leave the seeds in and the skin on the pumpkin! It all gets blended up at the end and you can't even notice it. I find that it gives the soup a beautiful velvety texture.
