Cauliflower and cheesey morsels

Ingredients

Batter

  • 60 g chedder,tasty or parmesan cheese or a mix of any
  • 1 bunch Parsley leaves
  • 2 shallots quartered
  • 80 g almonds
  • 500 g cauliflower pieces
  • 500 g water for steaming
  • 30 g Butter
  • 2 tablespoons GF Flour
  • 85 g Milk (Any)
  • Salt and pepper
  • 2 tablespoons GF flour ( extra)
  • oil or ghee for frying

Recipe's preparation

  1. Mill almonds in TM bowl 10 secs /speed7 or until fine. Set aside in a container that is suitable to coat the morsels.

    Grate cheese,parsley and shallots together in TM bowl on speed 9 until fairly fine. Set aside.

    Chop cauliflower to rice consistency on speed 9.

    Place cauliflower in steaming basket with 500g water in TM bowl and steam 15mins/varoma/speed2. Carefully drain the cauliflower using the spatular attached to the steaming basket and discard hot water in bowl. Puree the cauliflower in the TM bowl speed 8 until desired consistency. ( It doesnt need to be totally smooth). Set aside.

    Wash and dry TM bowl.

    Melt butter in TM bowl 1min/90deg/speed 2.

    Add flour and cook 1min/90deg/speed2.

    Set TM to 3min/90deg/speed2, add the milk gradually through the lid. The white sauce should be creamy with no lumps.

    Add cauliflower and season with salt and pepper, stir through on speed 2 until combined.

    Add grated cheese,shallots,parsley and stir through to combine on speed 2 until cheese melts, cool and refrigerate until firm.

    Shape teaspoonfuls into small flat rounds and coat well with almond meal and reserved flour.

    Shallow fry in hot ghee or oil. These can also be deepfried if preferred.

    Drain and serve hot or cold.

Tip

Serve as a canape or with a main meal accompanied by a salad. Great as a lunchbox treat for young and old!

I serve them with my beautiful Avocado Aioli.

Beautiful also with some homemade Mango Chutney.

To make nut free, coat in GF breadcrumbs.

Makes about 24.

    My partner and I made this last night, and found we weren't really fans of it. We thought we'd try something different and healthy but after fiddling with the instructions for ages then after frying we found the end product wasn't worth all the effort. Sorry, we wont be making this again.
