Chicken, Chia and Vegetable Sausage Rolls

Ingredients

Sausage Rolls

  • 2 chicken breasts, Sliced
  • 2 carrots
  • 1 zucchini
  • 2 Slices Bread, Soaked in 1/3 cup milk
  • 1 level tablespoon Veg Stock Concentrate
  • 4 heaped tablespoons chia seeds
  • 1 egg, Whisked
  • --- Sesame or poppy seeds, To sprinkle on top
  • 3 sheets Puff pastry

Recipe's preparation

    Sausage Rolls
  1. 1. Preheat oven to 200 degrees. Chop Carrots and Zucchini, 10secs/Sp 8. Scrape down sides and chop again 5 secs/Sp 8. Set aside.

  2. 2. Put chicken into bowl. Turbo 3 times until minced.

  3. 3. Add Carrot, Zucchini, Soaked Bread, Chia and Veg Stock back to bowl. Mix 10 secs/Sp 6 until combined.

  4. 4. Cut each piece of pastry in half. Divide chicken mixture evenly between each of the 6 pastry pieces. Brush 1 long side of pastry with egg and roll each up. Brush top of each with more egg and sprinkle with sesame or poppy seeds.

  5. 5. Cut each roll into 4 pieces and bake on a paper lined tray for 20-30mins at 200 degrees

Tip

You can freeze these sausage rolls at the end of step 4. Place the blue pastry plastic between each roll to avoid them sticking together. Just allow 10mins extra cooking time if cooking from frozen and quarter each roll about half way through cooking time.

 

You can add whatever veg you like to this mix, spinach and capsicum works well!

 

Serve with your favourite homemade tomato sauce.

    Followed recipe, except I had minced chicken already handy. They turned out golden and moist. Great hidden veggies!

    I didn't add the Chia and this might have made a big difference to the end result. Which wasn't great tmrc_emoticons.( I had to blend the bread stage multiple times as it wouldn't combine. How long should the bread have soaked for? It was however a large mixture requiring more pastry sheets and lots of left overs. I froze the cooked versions which reheated well.  One of my kids liked them and he is the fussy one!!!

  • I added 2 stalks celery to

    I added 2 stalks celery to the carrots and zuchini. I didnot slice the fillets but chucked them in and had to hold the thermomix steady a second until it started chopping, i also used 2 crust of bread, great way to get rid of the crust if no one at home likes it. Kids got home and devoured it. Have frozen the rest of the pies. I had no chai seeds so didnt get to use that but recipe turned out devine.
