Tomato and Olive Foccacia

Ingredients

Bread Dough

  • 500 g Baker's Flour
  • 1 sachet Yeast
  • 50 g olive oil
  • 1 tablespoon salt
  • 300 g warm water

Topping

  • 1 Tomato, chopped
  • 40 g Olives, chopped
  • Olive Oli

Recipe's preparation

    Bread Dough
  1. Weigh the flour into the TM, add the salt and yeast and stir on speed 4 for 3 secs to combine.

    Add the oil and the water and stir on speed 4 until the mixture comes together as a dough.

    Knead for 2 mins on interval speed. Leave to rise in a warm place, until the dough has doubled ...

  2. When the dough has risen, divide it into 2.  Flatten each into a circle shape and place on a baking tray.

  3. Topping
  4. Drizzle the flattened dough with olive oil and sprinkle with the tomatoes and olives.

    Leave to rise for another 30 mins in a warm place.

    Bake for 20 mins in a 200 degree oven.

Tip

- You can vary your toppings - I did one with pesto, parmesan and garlic

- Add seeds etc to your bread dough

- Serve with TM dips !!!
