Bacon, Leak, Corn and Cheese Savory muffins

Ingredients

Muffin Mix

  • 40 grams grated cheese, (Pre grate Cheese in TM)
  • 1 leak, Cut up into sections
  • 5 Short Cut Bacon Rashers, Fat cut off
  • 20 g oil
  • 300 g Self Raising Flour
  • 1 teaspoon Baking Power
  • 40 g caster sugar - or blitz your own
  • 150 g corn kernels
  • 1/2 cup milk
  • 2 eggs

Recipe's preparation

  1. Pre heat oven to 200 degrees

  2. Grate cheese in TM bowl as per EDC, then set aside, clean and dry TM Bowl

  3. Place cut leak and bacon into TM and chop 10 sec/speed 7. Scrape down sides and chop 10 sec/speed 7.

  4. Add oil and cook 4min/varoma/speed 1

  5. add all other ingredients and mix speed 5/ 30 sec using the spatula to mix counter clockwise. Then mix Speed 6/30 sec. Mixture should be all mixed together.

  6. greese a small and large muffin tray, then spoon mixture into tray filling sections to about 3/4 full.

  7. Place in oven for 11 mins for small tray and 13 minutes for large tray or until a skewer comes out clean.

  8. Let muffins rest for 5 mins then transfer to cooling rack.

    Once cooled, freeze or store in an air tight container.

Tip

Freeze leftover muffins.

    I left out the sugar as i wasn't sure why savory muffins would require it. Mine didn't rise very much but still tasted nice.
