beetroot veg fetta slice 60cal per serve

  • 6 large eggs
  • 100g wholemeal spelt flour
  • 70g Fetta Cheese
  • 30g Parmesan cheese, or romana
  • 1 carrot, peeled and chopped
  • 200g appro beetroot fresh
  • 200g zuchinni, washed and chopped in 4
  • small brown onion

Recipe's preparation

    slice
  1. grate beetroot carrots and zuchinni and onion 3-4 secs speed 4 don't over chop as you dont want mush  maybe do 2 secs scrape down Smile


     


    add eggs and spelt flour and mix 5secs speed4 till well combined.you can season but i found with fetta in it was salty enough


     


    pour into baking dish lined with greaseproof paper crumble fetta over and push down into mix  then sprinkle with parmesan and cook in medium oven 180 for 30-40mins

    Love the recipe. perfect as is ive swapped spelt to rice flour. Fantastic. Haven't tried freezing in portion but would be great to have in freezer for go to lunches.

    Beats a boring zucchini slice hands down. I left the veges quite chunky and it turned out amazing. Lots of colour and great flavour.
