  • 600 grams Baker’s Flour
  • 280 grams water
  • 80 grams sugar, raw sugar milled into a caster sugar
  • 10 grams salt
  • 1 large egg yolk
  • 20 grams olive oil
  • 10 grams instant yeast

Recipe's preparation

    Dough
  1. 1. Place the water, sugar and yeast in the TM. Process at speed 1 for about 1.5 min at 37 deg.


    2. Add the remaining ingredients and process at speed 6 for about 10 seconds to mix everything together.


    3. Then put into kneading mode and knead for 2.5 to 3 minutes


    4. Put into bowl, cover with dishcloth in a warm place to prove for 3-5 hours.


    5. Now you have to prepare the final shape.

  3. I take paper towel holders and wrap them well in aluminium foil and then I cover them in baking paper (as shown in the photo)


    Split dough into 12 equal portions and then divide each portion into 3.  Plait the dough and wrap around the paper towel holder allowing 10-15cm in between to allow the expansion of the dough when it bakes.


    6. Allow to rise atleast another 45 minutes or so.  Preheat the oven to 190 deg. Brush the top with an egg wash, sprinkle with poppy and/or sesame seeds, and bake for about 15-20 minutes or until golden brown.

    I found your recipe at 11.30pm, and have just made the dough! (I'm in Joburg, we're 6hrs behind you in Oz.)  It's going to rise overnight - and be ready to bake for my dinner party for 15 people tomorrow night.  Thanks so much for a fun, creative idea that really gives the "Wow" factor to my table decoration as well as being tasty and functional!  5 Stars!
