Pizza Wreaths - An Alternative to Pizza Pockets

Ingredients

4 portion(s)

Dough

  • 300 grams water, (lukewarm)
  • 2 teaspoons Yeast, (or one sachet)
  • 500 grams bakers flour
  • 20 grams oil, (I prefer macadamia)
  • 1 teaspoon Himalayan salt, (ground)

Filling

  • 4 tablespoons tomato paste, (or pizza sauce)
  • 200 grams Cheddar cheese, (or preferred cheese)
  • 2 pieces pineapple rings, (tinned in natural juice or fresh)
  • 3 pieces shortcut bacon

Topping

  • 40 grams Parmesan cheese, (cubed)

Recipe's preparation

    Topping
  1. Place parmesan cheese into TM bowl and grate for 15 seconds on speed 9.  Remove and set aside.

  2. Dough
  3. Preheat oven to 220C and line two baking trays with baking paper.

  4. Place water, yeast, bakers flour, oil and salt into bowl (in that order) and mix for 6 seconds on speed 3.  Then knead for 1 minute on Dough mode.

  5. Turn out dough onto ThermoMat and knead into a ball.  Wrap dough with the ThermoMat and prove for 15 minutes.

  6. Filling
  7. Place cheddar cheese into TM bowl and grate for 10 seconds on speed 8.

  8. Add bacon and pineapple to bowl and press turbo twice for 1 second.

  9. Forming Pizza Wreaths
  10. Turn out dough onto thermoMat and divide into four pieces.  Roll each piece into a rectangle, twice as long as it is wide.

  11. On the middle third of the dough rectangle (lengthways) spread the tomato paste.

  12. Add cheese, bacon and pinapple mixture over the tomato paste down the middle third of the dough.

  13. Using the spatula cut an equal number of 1cm strips down each side of the dough.

  14. Plait the dough strips over the filling to form a long plait and then place onto the baking tray in a wreath shape.

  15. Sprinkle the wreaths with parmesan cheese and allow to prove for a further 10 minutes before baking for 15 minutes or until golden brown.

Tip

Take care when serving fresh from the oven as the fillng can be very hot.  This recipe can be used for any of your favourite pizza toppings instead of the hawaiian version.  Although it is not the most healthy meal lunch in the world you can at least enjoy the thought that you are not putting all the unnecessary additives found in similar store bought items in your mouth.  The recipe can also make two large wreaths to share instead of the four smaller ones.

    You would need at least a 9 inch tin toput the whole mix in it comfortably. I usually split the mix in to two 8 inch tins. Can also do 6 and 7 inch tins tmrc_emoticons.)
