Spinach & Ricotta Rolls

Ingredients

Filling

  • 1 onion, roughly chopped
  • 1 clove garlic
  • 1 rasher of bacon, roughly chopped
  • 20 g olive oil
  • 250 g Frozen spinach, slightly thawed
  • 200g ricotta, drained
  • 100g feta, broken up

Rolls

  • 2 Sheets Puff Pastry
  • 1 egg, lightly beaten

Recipe's preparation

    Filling
  1. 1. Add onion, garlic and bacon to TMX Bowl

    2. Chop 5 secs / spd 7.

    3. Scrape down the sides of the bowl using the spatula.

    4. Add oil to the bowl & saute without the MC for 5 mins / Varoma / spd 1.

    5. Check base of bowl, scrape up any caramelisation.

    6. Add the slightly thawed spinach, broken up into chunks into the bowl.

    7. Chop 6-10 seconds / spd 5.

    8. Saute without the MC for 5 mins / Varoma / spd 1.

    9. Remove spinach mix from bowl & place into steaming basket over a bowl to drain.

    10. Rinse bowl to cool down (no need to clean thoroughly).

    11. Add 200g ricotta, 100g feta & 1 egg to the bowl, combine 6 secs / spd 3.

    12. Add drained spinach mix to TMX bowl & combine 10 secs / spd 4.

  2. The Sausage Rolls
  3. 1. Preheat the oven to 180 or 160 fan forced.

    2. Cut your puff pastry in half length ways.

    3. Spoon around 1/4C of the mixture down the middle & roll it up in the pastry with the seam side down. Place onto lined baking tray.

    4. Continue until all the spinach has been used up.

    5. Brush each roll with some lightly beaten egg.

    6. Bake in preheated oven for 25-30mins until puffed & golden. Serve warm.

Tip

I had enough to make one little tart, using a quarter of the square of puff pastry, filled with spinach & ricotta mixture & then folded the excess pastry over.

Don't overfill the rolls & there's no need to roll them super tight like a burrito, with the expansion during cooking you'll need the room (I speak from experience).

This recipe makes around 4-6 adult meal size sausage rolls, make them smaller for snacks or children. You can also cut the long rolls into small pieces.

Omit the bacon if you want a vegetarian version.
