Pumpkin, chorizo and spinach frittata

  • 40 grams Parmesan cheese, cubed
  • 40 grams cheddar cheese, cubed roughl
  • 400 grams Sweet Potato- cubed, Oven roasted
  • 150 grams bacon, Cut into 3cm pieces
  • 50 grams plain flour
  • 6 eggs
  • 400ml full cream milk
  • 2 --- Zucchinis, Cut into approx. 3cm chunks

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Pumpkin, chorizo and spinach frittata
  1. Roast cubed sweet potato in 180 degree oven for 30 minutes or until cooked. Set aside.

    Place cubes Parmesan and cheddar in TM bowl. Grate for 4 seconds on speed 7. Set aside.

    Place zucchinis in TM bowl. Grate for 4 seconds on speed 6. Add to bowl with reserved cheese.

    Add onion and bacon . Chop for 3 seconds on speed 6.

    Cook for 2 minutes, at 100 degrees , reverse, speed soft.

    Add plain flour, milk, eggs, grated cheese and zucchini . Mix for 5 seconds , reverse on speed 4.

    Lightly grease baking dish, place cooked sweet potato on the base of dish and pour egg mixture evenly over sweet potato.

    Cook for 40min at 180degrees until frittata is puffed and golden.

    Cool slightly before serving.
