Tuna and Vegetable Muffins

  • 150 g Tasty cheese, cubed
  • 1 brown onion, peeled and halved
  • 3 Zucchinis, each cut into 3-4 pieces
  • 2 carrots, peeled, each cut into 3-4 pieces
  • 150 g self-raising flour
  • 70 g vegetable oil
  • 5 Extra-large Eggs
  • Salt and pepper, to taste
  • 1 425g Tin Tuna in Springwater, drained well

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180°C. Grease 1.5 x 12-hole, 1.3 cup muffin tins with butter (18 holes required in total).
  2. Place cheese in TMX bowl and grate 5 secs/speed 6, MC on. Set aside.
  3. Place onion, zucchini and carrot in TMX bowl and grate 4 secs/speed 5, MC on. Set aside.
  4. Crack eggs into TMX bowl, and add self-raising flour, oil, salt and pepper. Mix 20 secs/speed 4, MC on.
  5. Return cheese, onion, zucchini and carrot to TMX bowl, and add the drained tuna. Mix 30 secs/speed 6 Counter-clockwise operation, MC on.
  6. Spoon mixture into prepared muffin tins and bake for 25 minutes, or until cooked through.
