  • 300 g pumpkin, chopped into 3cm cubes
  • 130 g zucchini, roughly chopped
  • 80 g onion
  • 3 eggs
  • 60 g extra virgin olive oil
  • 1 heaped tablespoons Vegetable stock paste
  • 60 g coconut milk
  • 130 g tapioca flour
  • 60 g Coconut Flour
  • 20 g nutritional yeast
  • 2 teaspoons baking powder

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Preheat oven to 180°C and grease or line a 12 hole muffin tray, set aside.
  2. Place pumpkin, zucchini and onion in mixing bowl and chop for 5 seconds/speed 5. Transfer to a bowl and set aside.
  3. Place eggs, oil, stock paste and coconut milk in mixing bowl and blend for 8 seconds/speed 3.
  4. Add all dry ingredients, mix for 10 seconds/speed 5. Scrape down the sides of the bowl with spatula.
  5. Add chopped vegetables, mix for 20 seconds/speed 3.
  6. Divide mixture evenly between muffin holes and bake for 25 minutes or until a skewer comes out clean when inserted into centre of a muffin.
  7. Allow to cool for 5 mins then transfer muffins to a wire rack to cool further.
  8. Serve muffins warm with sour cream, relish and a side salad.

Tip

For a chunkier version, cut pumpkin into 1 cm cubes, set aside and fold through with the spatula at the end.
