Recipe's preparation
Preheat oven to 180*, grease 12 cup muffin tray
Chop onion 2 sec/spd 7
Add bacon to bowl, chop 2 sec/spd 3
Add veg to the bowl (broccoli and carrot OR zucchini and carrot), chop 5 sec/spd 4
Add rest of ingredients to bowl, mix 15-20/"Counter-clockwise operation" /spd 4
Bake approx 30 mins until browned slightly

Tip
I have found this to work best in silicon baking tin. It's very difficult to prevent it sticking in anything else.
Bacon can be replaced with a small, drained tin of tuna.
Can be made as a slice.
Great for picnics and lunchboxes as they freeze well and are delicious both cold or hot.

They turned out to be a mix between a quiche and a muffin. I used one really large zucchini and one carrot. My mixture was quite runny, so will add more flour next time.

i made mine with broccoli and used the silicone cases and they fell straight out. I got about 18 out of my cases and only needed to cook for a bit under 25 mins.

Can you please state approximately what weigth of zuchinni and carrot is required in this recipe? I bought 2 zuchinnis as stated in the recipe and could only fit one and a half in. I followed the recommended chopping time/speed and there were still uncut chunks, which I removed, which meant I only had one zuchinni in. Followed the recipe exactly after. But the inside of the muffin were still really wet even when the outside was really brown. Tasted nice though. But I'm disappointed it didn't turn out ok. The mix filled a normal sized 12-muffin pan, a semi-small 12-muffin pan AND had leftovers to go into a loaf pan. I think the zuchinni in your area must be tiny compared to the ones over here!! Quite diappointed that all I have to show for it are soggy vege muffins. I hope you can reply so that I can try this again and have success the next time!

This is a good recipe, muffins are a nice texture. I had no problem with sticking using non-silican muffin trays, dont know if it was luck, because I sprayed them with olive oil spray or mabe because i used oatbran for half the quanity of flour. I think the oatbran (oats ground up in thermo) made the mixture less sticky next time I will try buckwheat

Thanks for the recipe. It's one of the first things I made (as a slice) in my new thermo. Tasty and my kids love it. They prefer it to sandwiches in their lunchbox!
