  • 2 Zuchinnis Medium size
  • 1 carrot
  • 3 Rashers of Bacon, Chopped
  • 120-150 grams cheese, I use tasty
  • 150 grams Self Raising Flour
  • 50-60 grams oil
  • 5 eggs
  • 1 brown onion
  • Salt and pepper, To taste

Recipe's preparation

  1. 1. Grate Cheese on speed 7, for 3-4 secs. Set aside.


     


    2. Grate Zucchini, carrot and onion speed 5, 3-4 secs. Scrape down sides.


     


    3 Add all remaining ingredients and counter-clockwise operation speed 3-4, for 40 secs


     


    4. Place in an oiled Lasange size baking dish and bake on 180 degrees for 30-40 mins, until top is well browned.

Tip

Have made these in muffin tins for the kids, and they turn out well. They can be hard to get out of the dish or tins, so I would advise well oiling and also ensuring they are cooked through.

    Zucchini, carrot & bacon slice - This time I added capsicum, a teaspoon of Italian herbs and 100g of tasty and 50g of parma cheese with garlic. Yum. You can do so much with this recipe.  very versatile

    Zucchini, carrot & bacon slice - Love this recipe... Added a tin of sweet corn kernals & 2 chopped garlic cloves added to step 3. In step 2, speed 4 for 4 seconds for a chunkier mix.  Baked extra 20 minutes to cook right through.  Yum.  tip: grease  with butter not oil.

    I made this for dinner tonight. I made it gluten free using aldi flour. I can't eat onion so omitted that, added a capsicum and corn instead. Super yum, super easy. This will be made time and time again. Thanks for sharing tmrc_emoticons.-)

    Great for kids lunches.  I cooked the mixture in cardboard muffin cases and they turned out beautifully.  I put them in the freezer but not sure why i bothered as the kids took them all for lunches so they were gone within days.

    Yummo..Made this tonight and it was tasty! I did add 1 clove garlic sliced in 3 added with the veggies and only did speed 4 for 3-4 seconds for chopping as I didn't want mine chopped too fine. When adding all other ingredients in Step 3 on Counter-clockwise operation I stopped after 10sec to scrape down and mix a little manually before continuing a further 15 sec.  2 more changes - I used heaped tspn of veggie stock and also Gluten Free SR Flour.  tmrc_emoticons.)
