Zucchini Slice (vegetarian)

  • 220 g Cheddar cheese, Cubed
  • 750 g zucchini, Chunks
  • 2 onions, Halved
  • 8/9 eggs
  • 300 g SR flour
  • 1 tsp baking powder, (Optional)
  • 150 g olive oil

Recipe's preparation

  1. 1. Grease a ceramic lasagne dish/muffin tins.

    2. Cube cheddar cheese, place in the TM bowl and grate for 5 secs / speed 6. Set aside.

    3. Place zucchini and onion in the TM bowl and chop for 3-4 seconds / speed 5. Set aside with cheese.

    4. Add SR flour, baking powder, oil, eggs and seasoning to taste to the TM bowl. Mix for 20 seconds / speed 4.

    5. Return cheese, zucchini, and onion to the TM bowl and combine all ingredients for 30-40 seconds / Counter-clockwise operation"Counter-clockwise operation" speed 3.

    6. Pour mixture into the prepared tray and bake in a pre-heated moderate oven for approximately 30-40 minutes or until golden.


I Also use this recipe to make the zucchini slice in muffin tins and freeze for school lunches.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     I made this slice and it is so good. I mostly followed the recipe, but thought my carrots and Zuccini may have been small so added 3 of each........and added about 3/4 of the cheese in the mix, saved the rest for the top, but did add a little bit more cheese to the top.........😉
