Zucchini Slice

Ingredients

32 piece(s)

  • 150g Tasty Cheese cubed
  • 400g Zucchinis, roughly chopped
  • 200g carrot, roughly chopped
  • 1 onion large, halved
  • 3 cloves garlic
  • 2 sticks rosemary
  • 3 sprigs parsley
  • 200g bacon, roughly chopped
  • 7 eggs
  • 150g Wholemeal SR Flour
  • 1 tbsp Veg Stock Paste
  • 40g extra virgin olive oil

Recipe's preparation

  1. Grease and line a 24cm square tin and set oven to 190C fan forced.

    Add cubed cheese to mixing bowl and chop 10 sec / sp 9, set aside.

    There is no need to clean the bowl. Add the zucchini and carrot and chop 5 sec / sp 5, set aside also.

    Add the onion, garlic and herbs and chop 2 sec / sp 6, scrape down the sides of the bowl.

    Add the bacon and chop for a further 2 sec / sp 5.

    Add the eggs, SR flour and stock paste to the bowl and stir 30 sec / Counter-clockwise operation sp 3.

    Return the cheese, chopped carrot and zucchini and oil to the bowl and stir for a further 40 sec / Counter-clockwise operation / sp 4.

    Pour the egg mixture into the prepared tin and bake for 45 min - 1 hour or until the zucchini slice is lightly golden in colour.

Tip

You can use any herbs that you have in your garden, basil and coriander goes well too.

    Ames87: add more oil and cook longer if needed. Recipe on cookidoo has 80 g oil. If your vegetables have a lot of water after grating put in steaming basket and press liquid out before adding back in. We bake until really golden on top not just edges.

    Yes I freeze it all the time. I cut into squares to freexe and then pop into the kids lunch box the night before.

    Its a nice alternative to constantly making sandwiches tmrc_emoticons.;-)
