  • 120 grams Cheddar cheese
  • 375 grams zucchini, roughly chopped
  • 1 onion, large, quartered
  • 100 grams bacon, roughly chopped
  • 5 eggs
  • 150 grams Self Raising Flour
  • 95 grams vegetable or grapeseed oil
  • salt to taste
  • pepper to taste

Recipe's preparation

  1. Grease a ceramic lasagne dish.

    Cube cheddar cheese, place in the TM bowl and grate on 5 secs / speed 6.  Set aside.

    Place zucchini, onion and bacon in the TM bowl and chop on speed 5 for 3-4 seconds.  Set aside with cheese.

    Add SR flour, oil, eggs and salt/pepper to the TM bowl and mix on speed 4 for 20 seconds.

    Return cheese, zucchini, onion and bacon to the TM bowl and combine all ingredients on speed 3 for 30-40 seconds on reverse.

    Pour mixture into the prepared dish and bake in a pre-heated moderate oven for approximately 40 minutes or until browned.

    Serve warm (or cold!) with salad.

    Yum!

    I used a chorizo instead of bacon, the slice was demolished so I made another with a carrot to bring up the zucchini weight and again a chorizo and some dried chili flakes = delish for both

    I add a carrot and reduce eggs to 4. I also dice the bacon and stir it in at the end as I like bacon pieces in my zucchini slice.

    I usually make it once a week it's such a good snack to have in the house or for work even a light lunch.
    I normally lessen the zucchini a touch & add in a carrot or even diced pumpkin ( when I do this I put the reverse function on to mix it fall through)

    Love this recipe. A perfect way to use up my homegrown zucchini’s and eggs. I have plenty of cherry tomatoes in my garden too and added these to the top before baking. I now have a whole lot in the freezer for lunches.

    I only use 50mls of oil - never had an issue.
    One of our favourite-breakfast/snack/dinner.
    Little tip - When reheating use a sandwich press, it give the slice a little crunch on the outside-Amazing!!!

    This will now be my go-to Zucchini Slice recipe. I have found many others too moist or dense. This one is perfect. I omitted bacon and added half a red capsicum. I didn't worry about emptying out the bowl in between steps - just added the ingredients to the bowl in order of ingredients list and pulsed until at the desired consistency.

    So many zucchini slice recipes out there, this one works really well. I used olive oil and reduced it to 50g. Left out bacon and added a carrot instead. Also added a tin of corn in the last step. Great base recipe that you can change up.

    This is the second Thermo Zucchini Slice I have tried and by far the best. I did reduce to the oil by half as per other comments and replaced the Bacon for Sundried tomatoes to make it vegetarian. I didnt bother chopping everything seperate either I just chucked it all in together to chop then added the flour and eggs. If using plain flour and adding your own baking poweder it is three teaspoons of baking powder with the 150g of plain flour. I am saving this recipe as my new go to, even my picky three year old ate three slices which is unheard of!

    Beautiful, saves grating. I've made with both SR & GF flour, both worked perfectly. I reduce oil to 50g as suggested by others. I add a carrot with onion & bacon. Then add zucchini with all wet ingredients. You really don't need to keep removing from the bowl & adding back in, it still works even if you're lazy!

    I just made this again for the second time. No bacon on hand so just chucked in veggies to substitute - carrot, mushroom, capsicum. I doubled the cheddar cheese and also added in 50g parmesan. Yummy yummy!! Such a great healthy recipe for breakfast, lunch or snack tmrc_emoticons.-)

    Made this for work function and it was a huge hit! I substituted carrot (grated in thermie first before adding other ingredients) for the bacon to make it vegetarian and as per others suggestions added cherry tomatoes and some sweet chilli sauce. Awesome! And very easy to make. Thanks for sharing 👍👏
    PS - served at room temp and was perfect for work as didn't have to heat up!

    Damn it why does it have to be my child that wont eat this lol... it is very tasty however I found the flavours very subtle and I would prefer more of a flavour punch, however I'm not sure how I can achieve this ? I'm a newbie in the kitchen.

    Added carrot and a little extra cheese also halved some cherry tomatoes and put face up as suggested previosly. Made a version of this all the time before thermie...soooooo much quicker now! Might try diced ham (off bone) in place of bacon next time for a change.

    Thanks for sharing this super easy and really tasty recipe. I popped a punnet of cherry tomatoes on top. I simply halved the tomatoes and put them cut side up on top before cooking the slice. I'll definitely be making this again (regularly)!!!
