I am so bad at making muffins but at last there is a recipe that worked! So delicious and my girls loved them. I used coconut sugar as I had run out of brown sugar and baked them in a greased muffin tin with no liners. They had a lovely, slighlty crisp outside and so soft inside. Have you tried these with outher veggies or fruits? Really light and tasty! Thank you!!

Will definitely make again, but will double next time.
