30 Second Lemon Cupcakes

  • 2 portions eggs
  • 1 level tbsp lemon rind
  • 2 level tbsp lemon juice
  • 250 grams Greek or natural yoghurt
  • 350 grams white sugar
  • 110 grams vegetable oil
  • 300 grams self-raising flour

  • 120 grams white sugar
  • 60 grams freshly squeezed lemon juice

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cupcakes
  1. Preheat Oven to 180C
  2. Grease muffin tin
  3. Place Eggs, Lemon Rind, Lemon Juice, Yoghurt, Sugar and Oil into bowl
  4. Mix for 10 secs at Speed 4
  5. Add Self Raising flour to bowl and mix for 10 secs at Speed 3
  6. Pour into muffin tin and place into the oven
  7. Cook for 20 mins or untiil golden on top then transfer cupcakes to wire rack to cool
  8. Clean bowl and then add Lemon Topping ingredients to the bowl.
  9. Mix at speed 2 for 5 sec then pour over the top of each muffin. Then serve.

Tip

These are great for school lunches. They freeze well.

Mixture can be made into a cake. Pour mixture into a round tin and bake for 35 mins or until cooked through.

    Love this recipe! Replaced the tablespoon of lemon zest with an additional tablespoon of lemon juice as it was all I had and reduced the sugar to 300g. They turned out so light and fluffy.
