Almond & Raspberry Slice

  • 60 grams sugar
  • 70 grams Butter
  • 2 --- eggs
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking powder
  • 65 grams plain flour
  • 300 grams frozen or fresh raspberries
  • 170 grams almond meal

Recipe's preparation

  1. Preheat the oven to 160 degress fan forced and line a 20cm x 30 cm baking tin with baking paper

    Place sugar into the TM Bowl and pulverise for 3 seconds on speed 9

    Add butter to the TM Bowl and cook for 1 minute on 90C on speed 1

    Aerate the butter and sugar for 2 minutes on speed 3

    Add the eggs one at a time to the mixture on speed 3 through the lid, along with the vanilla essence

    Add the plain flor, baking flour and almond meal to the mixture. Mix Counter-clockwise operation on speed 3 using the spatula to assist until a smooth batter forms. Approximately 2-3 minutes

    Pour the mixture into the lined baking tin and cover the top with the raspberries.

    Bake in the pre-heated oven for 30 to 40 minutes, or until the cake is cooked when a skewer comes out clean.
