ALMOND TORTE (TORTA MANDORLA)

Ingredients

CAKE

  • 150 grams Butter
  • 200 grams sugar
  • 3 eggs
  • 100 grams amaretti biscuits
  • 100 grams almonds
  • pinch salt
  • dash rum or Amaretto liqueur
  • 130 grams plain flour
  • 2 teaspoon baking powder
  • 2 squares puff pastry
  • icing sugar

Recipe's preparation

    Method
  1. Mill amaretti biscuits 3 seconds; speed 5 set aside

    1. Mill almonds 7 seconds; speed 4 set aside
  2.  

    1. Add Butter to bowl melt 5 mins; speed soft; 60 deg;
    1. Add sugar to butter and mix 15 sec; speed 5
  3. scrape down bowl add eggs; mix speed 5 for 15 seconds

  4. add all other ingredients and blend for 10 seconds; reverse; speed 5

  5. scrape down bowl and blend speed 5; 10 seconds

  6. Grease dish with olive oil spray and line with sheets of puff pastry (one criss-cross the other so you have 4 corners of pastry).  Add the mixture into the middle of the dish and fold in the 4 corners of the puff pastry. Spray top of cake and corners of puff pastry with oil spray.

    Cook for 50mins 160 deg fan forced oven

    check that cooked in middle; turn oven off and leave in oven

    When cool sprinkle with icing sugar

Tip

can replace 130 grams self raising flour rather than baking powder and plain flour

With cooking time check after 30 mins - you may need to cover with alfoil for remainder of cooking time so top of cake doesnt brown
