Pastry

  • 2 sheets puff pastry, ready-made, butter

Filling

  • 100 grams castor sugar premilled
  • 2.5 centimetre ginger fresh
  • 20 grams Butter, unsalted
  • 1000 grams apples, cored and quartered, Granny Smith

  • 1 egg white
  • 2 tablespoons castor sugar, reserved

Recipe's preparation

    Filling
  1. Premill sugar if needed to have castor suger.

    Set aside 2 tblps for topping and the rest for filling.

    Add ginger chop 4 secs speed 7

    Add butter , chop 5 secs speed 5. Scrape down sides of bowl

    Cook 5 mins Varoma speed 2.

    Add apple, chop 7 secs speed  4-5 to achieve smallrough dice. 

    Cook 12 mins Varoma Counter-clockwise operation speed 2 and half.

    set iaside in shallow bowl to cool in fridge. must be cold prior to assembling.

     

  2. Pre Heat oven 220deg.

    Cut 1 sheet puff pastry in half.

    Fold one half in half lengthwys and and cut acros fold at 5mm intervals leaving a 1.5 cm border , unfold.

     

  3. Directly on baking paper, on tray, Place half cold apple mixture on other half of pastry leaving 2 cm edge free.Brush around edge with with cold water.  place lattice pastry over apple mixtureand press the dough edges together with fingers. Use fork tines to press edges if desired. Repeat with other sheet of pastry and remaining apple mix.

  4. Bake on hot oven 15 -20 mins until puffed and light brown.

    whisk egg white with fork to frothy.

    Brush hot Jalousie with eggwhite and sprinkle saved castor sugar on top.

    Bake a further 10 minutes until topping crispy and pastry deep golden.

    Cool on rack - serve warm or room temperature.

    Simple & delicious - my kids really went for this! 220 degrees was a bit hot, 190 was perfect for the second batch - oh yes, this recipe made 4 jalousies for me!
