Apple, Oat & Sultana cookies

  • 2 apples (small), Or 1 large
  • 75 grams brown sugar
  • 130 grams unsalted butter
  • 2 eggs
  • 150 grams self-raising flour
  • 1 tsp ground cinnamon
  • 150 grams rolled oats
  • 70 grams sultanas, (Or raisins)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cookies
  1. core apples, cut into pieces and place into Closed lid blitz Gentle stir setting 5 for 4-5secs until well chopped.
    tip out into clean bowl.
    Add sugar and mill 4-5secs Gentle stir setting10.
    Add butter and chop for 4-5, Gentle stir setting 4
    Insert butterfly whisk, whip 1min Gentle stir setting4
    scrap down bowl and repeat or until light and fluffy.
    Add eggs and apples and mix 15secs Gentle stir setting 4
    Add flour and cinnamon and mix 10secsGentle stir setting4
    add oats and sultanas 10secs Counter-clockwise operationspeed 4 until combined.
  2. Transfer into clean bowl and place in fridge for 2hs (or overnight) until firm. This is not necessary but I highly recommend as it makes the dough a lot easier to roll.
  3. Preheat oven to 180c
    roll into small balls and place on a baking tray with 1-2cms between them.
    Flatten slightly.
    bake 12-15mins or until golden.
    Store in airtight container.

Tip

If mixture is a bit dry, add 1-2tablespoons of milk. To moisten dough.

    I divided the batch in two, made half with sultanas and half with chocolate chips. I only chilled the mixture for a few minutes prior to cooking.

    I really enjoyed these as did all my family members. Thank you.
