Banana and Carrot Cake

Cake

  • 175 grams carrot
  • 2 bananas, Ripe
  • 3 eggs
  • 175 grams Soft brown sugar
  • 175 grams plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon bicarbonate of soda
  • 175 grams sunflower oil
  • 175 grams walnut pieces, Optional

Icing

  • 75 grams Butter, Softened
  • 75 grams cream cheese
  • 150 grams icing sugar
  • 1 teaspoon vanilla extract
  • Chopped walnuts, To decorate

Recipe's preparation

    Cake
  1. Preheat oven to 180C/160C fan forced. Grease a 23cm springform tin. 

  2. Grate carrots and bananas on speed 5 for 8 seconds. Set aside. 

  3. Add the eggs and sugar to the bowl and mix for 20 seconds on speed 5.

  4. Add the oil and mix for 10 seconds on speed 5.

  5. Add flour, salt, baking powder and bicarbonate and mix for 10 seconds on speed 5. Scrape down the sides and mix again for 10 seconds on speed 5.

  6. Add grated carrot and banana and mix for 5 seconds on speed 4.

  7. Add walnuts and mix for 10 seconds on reverse speed 4.

  8. Pour into tin. Bake for approx 1 hour or until a skewer comes out clean. Cover with foil if it begins to brown too much. Cool on a rack. 

  9. Icing
  10. Add all ingredients to TM bowl and mix for 30 seconds on speed 5 or until smooth.

Tip

This recipe belongs to The Annoyed Thyroid.

It is my all time favourite and I would just like to share it so everyone can try it. The icing is to die for, so don't skip it tmrc_emoticons.)

I've made this into cupcakes before and it works out great. I've also decorated with cinnamon sugar instead of walnuts too.

So yum!!

    This is a favourite in our house! I've recently made it in a loaf tin and added some butter so it's like bread. It freezes great and I've just made one now with GF flour for my sister. Will see how it turns out. Looks great so far!!

    I dont know what I have done wrong, this is the first cake I have made in the thermo, also the first cake that has EVER sunk on me...feeling devastated!
