  • 60 grams Pitted Dates, dried
  • 120 grams Butter
  • 1 egg
  • 2 Bananas ripe
  • 1 teaspoon Vanilla Essence/Paste
  • 65 grams Sugar.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Grease Muffin Tin

    2. Preheat oven to 180C 

    3. Place Dates and Butter into bowl and melt for 2 mins, 70 degrees, Speed 1.5

    4. Mix butter and dates for 4 secs, speed 7

    5. Add egg, bananas, vanilla to the bowl and mix for 10 secs at speed 3

    6. Add Sugar and Flour to the bowl and mix for 5 secs speed 3 (until just combined)

    7. Transfer to prepared muffin tin and bake in the oven for 18-20 mins

    8. Allow to rest for 5 mins then transfer muffins to a cooling rack

Tip

For a light fluffy muffin ensure that you don't over mix. They only need to be mixed in step 6 until just combined

    I've adapted this recipe leaving out the sugar and adding cacao and coconut for extra flavour and both hubby and I love them! Making them once a week for work snacks at the moment.
