Banana Bread

Ingredients

  • 100 g Butter
  • 200 g brown sugar
  • 2 eggs
  • 290 g SR flour
  • 250 g Banana (over ripe)
  • 2 tablespoon Chopped Walnuts (optional)

Recipe's preparation

  1. Preheat oven to 180 degrees celcius.

     

    Put roughly chopped butter & sugar into jug.  Speed 4 for 20 seconds.  Scrape down sides of jug.

     

    Add flour, mashed overripe banana & eggs.  Speed 4 for 10 seconds.

     

    Pour into a loaf tin that's been slightly greased or lined with baking paper.  Sprinkle top with chopped walnuts if desired.

     

    Put into oven for approx 50 mins or until cooked through (test with skewer, when clean its cooked)

Tip

Omit walnuts to make nut free.

    This is a really yummy recipe, thank you! I only put in about half the sugar, and found that was enough. And also had to add some milk because I didn’t have enough eggs or banana. Haha. Still came out ok, although a little crumbly because of the missing ingredients!

    Great bread only used 50g of raw sugar and added a squirt of sugar free mayple syrup and used wholemeal flour aswell. Also added some oats to the top instead of nuts 😊

    Great banana bread recipe. Very tasty and loaf rises nicely. 

    Very easy and lasted a while and nice toasted for a breaky option. Added this one to my collections.
