Banana Cake

  • 80 grams rapadura or honey or coconut sugar, you could substitute using 60g dates
  • 125 grams butter, unsalted or salted, I prefer unsalted or Tmx made
  • 2 Large Ripe Bananas
  • 1 teaspoon Vanilla bean paste or extract
  • 1 egg, you could substitute with chia - see tips
  • 350 grams self raising flour - Gluten Free
  • 100 grams walnuts
  • 60 grams Desiccated Coconut, (optional)

Recipe's preparation

  1. Pre-heat oven 150 degrees.

     

    line or grease baking dish, cake tin or muffin tray.

     

    Place walnuts into bowl, chop 5sec sp2. Set aside. No need to clean bowl.

     

    Add butter and rapadura sugar, melt 2min sp 2. Same if using honey but if using dates blitz butter and dates together 15sec sp7 then melt.

     

    Add the rest of the ingredients except for walnuts 30sec sp4.

     

    Add walnuts mix 10sec Counter-clockwise operation sp3.

     

    Pour into baking dish/tray and bake 20-25 minutes until golden and a skewer comes out clean.

Tip

Egg substitute - chia. 1 egg = 1tbspn chia seeds soaked in 3 tbspn water for approx 5 minutes.
