Ingredients

Wet ingredients

  • 3 --- ripe bananas
  • 1 tablespoon canola oil or other veg oil
  • 75 g Sourcream
  • 2 teaspoon vanilla essence

Dry ingredients

  • 210 g Self Raising Flour
  • 100 g sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarb soda
  • 1/8 teaspoon salt

Recipe's preparation

  1. Preheat oven to 180C. Line a loaf pan with baking paper.

  2. Add bananas to bowl and mash 5 seconds speed 4

  3. Add all wet ingredients, mix 5 seconds speed 4

  4. Add all dry ingredients, mix 20 seconds speed 5.

  5. Pour into loaf pan and bake for 35-45 mins  until skewer comes out clean. 

Tip

Can be sliced and frozen for school lunch boxes! Great to use up mushy bananas which you can freeze and use when you have 3 for the recipe. I have also made now with pears in place of banana. Works great!!

    Smile This is a PERFECT recipe for Banana bread. I use 3 larger or 4 smaller bananas. I bake it longer than suggested (about 50-55 minutes). Thanks for sharing Dan3in3.

    I have just tried making this with 3 mushy pears that I had. Threw in a handful of choc melts before I mixed the dry ingredients so they broke up and mixed through. Came out perfect. So I think you can probably use this recipe for most moist fruit!
