Banana Muffins with Chocolate Chips

  • 200 g raw sugar
  • 130 g butter at room temperature
  • 3 eggs
  • 2 large very ripe bananas
  • 300 g plain flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 60 g Milk
  • 180 g chocolate chips
  • 100 g walnuts, chopped

Recipe's preparation

    Banana muffins with chocolate chips
  1. Preheat oven to 180 degrees c.  Either grease muffin tins or place paper cases in muffin tins

    Place raw sugar in bowl and mill for 4 seconds on speed 9.

    Add butter and mix for 20 seconds on speed 5

    Add eggs and mix for 20 – 30 seconds on speed 5

    Add banana and mix for 5 – 10 seconds on speed 5 – 6

    Add flour, baking powder, bicarbonate of soda and milk and mix for 5 seconds on speed 5

    Add chocolate chips and walnuts if using and mix 5 seconds, reverse on speed 4

    Spoon mix into the prepared tin or cases

    Bake for 20 mins

    Remove from oven and allow to cool for 5 mins before placing on a cooling rack

Tip

You can use half wholemeal and half white plain flour if desired.

I tend not to use the nuts so that they are great for school lunches.  I bake a batch and then freeze them and then I just grab them out when I need to for the kids recess.  Then I always have a back up.

    Delicious! I put 200g choc chips and no nuts (for school). I only had small bananas so I used 4. It made 46 mini muffins which I cooked for 12 mins. 👍

    These worked a treat - my daughter made them on our TM5 and they tasted delicious - they were very moist - we used white flour instead of wholemeal and didn't use the walnuts but used both white and milk chocolate chips

    Thanks for this recipe....I've just made them and they are great! I used 80g white choc bits and 80g dark choc bits but left out the nuts. They were just like my usual go to recipe before I got my thermi....but now this one will be tmrc_emoticons.)

    Great recipe. Used caramal chips instead of chocolate chips, great with the banana flavour.  Also didn't have walnuts so used half flaked almonds (walnuts would have definitely been better) and white chocolate chips. 

    Quick and simple - good for a morning tea play date!
