Banana Muffins with Chocolate Chips
- 200 g raw sugar
- 130 g butter at room temperature
- 3 eggs
- 2 large very ripe bananas
- 300 g plain flour
- 2 teaspoons baking powder
- 1/2 teaspoon bicarbonate of soda
- 60 g Milk
- 180 g chocolate chips
- 100 g walnuts, chopped

Recipe's preparation
Preheat oven to 180 degrees c. Either grease muffin tins or place paper cases in muffin tins
Place raw sugar in bowl and mill for 4 seconds on speed 9.
Add butter and mix for 20 seconds on speed 5
Add eggs and mix for 20 – 30 seconds on speed 5
Add banana and mix for 5 – 10 seconds on speed 5 – 6
Add flour, baking powder, bicarbonate of soda and milk and mix for 5 seconds on speed 5
Add chocolate chips and walnuts if using and mix 5 seconds, reverse on speed 4
Spoon mix into the prepared tin or cases
Bake for 20 mins
Remove from oven and allow to cool for 5 mins before placing on a cooling rack

Tip
You can use half wholemeal and half white plain flour if desired.
I tend not to use the nuts so that they are great for school lunches. I bake a batch and then freeze them and then I just grab them out when I need to for the kids recess. Then I always have a back up.

Great recipe. Used caramal chips instead of chocolate chips, great with the banana flavour. Also didn't have walnuts so used half flaked almonds (walnuts would have definitely been better) and white chocolate chips.
