Banana, Sultana and Oat Bran Muffins

  • 2 large bananas, Very ripe roughly broken up into pieces
  • 1.5 Cups of sultanas
  • 100 grams Butter
  • 300 grams milk (HiLo)
  • 1 teaspoon bicarb
  • 150 grams wholemeal flour
  • 75 grams plain flour
  • 75 grams Self Raising Flour
  • 60 grams oat bran
  • 1.5 teaspoon baking powder

Recipe's preparation

    Muffin Mix
  1. 1. Pre-heat oven to 175 degs C. Grease muffin tin or line with muffin cases.

     

    2.Add butter to Closed lid and melt 2 minutes/60C/Speed 2.

     

    3. Add milk and Bi carb to melted butter and combine 15 seconds/Speed 3.

     

    4. Add all flour, oat bran and baking powder to Closed lid and mix 30 seconds/Speed 5 or until well combined.

     

    5. Add banana and sultanas to Closed lid and combine 10 to 15 seconds/Speed 5 or until combined.

     

    6. Spoon mixture into muffin tin and bake for 30 minutes or until cooked through and golden.

Tip

The sweetness of these muffins comes from the sultanas and the ripe banana. No sugar is added.

 

Add more or less sultanas to taste to adjust sweetness.

    These are delicious! My 3.5year old loves them! I used half butter, half coconut oil. I also used a tea spoon of cinnamon. I made them as mini muffins - 38 in total and cooked for 12minutes. Came out perfect!

  • I love them! I mixed in the

    I love them! I mixed in the banana and then added in the sultanas on a slow stir on reverse otherwise I found the sultanas get wizzed up into nothing. I also added in a cup of walnuts which made them really yummy. Next batch I am thinking of adding in an apple too.

    Thank you fm -- a hit with 2 yr old and husband, no sugar and wholemeal flour you are a queen inmy opinion (am diabetic and some of the recipes don't quite suit my taste but your muffins are superb)

    Wow! These are utterly scrumptious! My son has just started kindy and has reported that others have muffins. In a fit of enthusiasm at 10pm, I hunted online to find something that I could throw together with ingredients I already had. Now 10.45. These are super light and fluffy and very yum. They're gonna be a hit! Thank you.

     

    BTW. I'm renowned for being useless at baking so this is my first attempt using a TM for baking -  delighted.
