  • 125 grams softened butter
  • 2 large eggs size7
  • 2 large very ripe bananas
  • 3 tablespoons Milk
  • 1 level teaspoon baking soda (bicarb)
  • 225 grams plain flour

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Banoffie Cake (using banana cake from edmonds cookbook)
  1. mill sugar speed10/10secs scrape down sides with spatula

     

     

     

     

     

     

     

  2. add butter speed6/10sec 

  3. insert butterfly and cream speed4/50secs

    remove butterfly

  4. add eggs and bananas  pieces speed3/10secs

  5. heat milk to boiling on stove top or microwave then add baking soda (bicarb)to milk and mix together then add to mixture in tm bowl speed 3/20secs

  6. add flour and baking powder speed3/20sec

  7. pour two thirds of cake mixture into prepare and lined cake tin, add half of the caramel and gently stirring through mixture, then add remaining third of cake mixture and other half of caramel to cake and stir gently into mixture  

  8. bake 180 degrees celcius 35 to 40 minutes

    check at 35 minutes if not cooked continue to cook for another 5 minutes or cooked through.

    when tested with a skewer it may have some caramel on it, that doesnt mean cake is not cooked.

Tip

prepare cake tin by greasing and linning with baking paper and light dust of flour

once cake is out of the oven run a knife around the sides of tin to free cake set aside for five minutes then turn out onto cake rack.

when cool ice with chocolate icing or your choice of icing or just dust with icing sugar

    I use this recipe just for the banana cake, it comes out perfectly every time! Delicious (just like Grandma used to make the long slow way Lol).
