light muffin base recipe

  • 110 g milled raw sugar
  • 300 g plain all purpose flour
  • 3 teaspoons baking powder
  • 2 tablespoon honey
  • 1 egg
  • 310 g buttermilk
  • 80 g vegetable oil
  • 1 tsp vanilla extract

Recipe's preparation

    Base muffin
  1. Preheat oven to 180 degrees C.

    Mix first the wet ingredients together in the TM bowl on speed 3 for 4-5 seconds, then add all the dry ingredients to the bowl and mix on speed 3-4 until you have a smooth dough. (about 5 seconds).

    Bake 25-30 min on 180 degrees C (test with skewer), serve hot or cold, with or without custard (EDC).

  3. OPTIONS: add on REVERSE to this base mix:


    160 gr frozen or fresh raspberries together with 45 gr Oats.


    140 gr pitted & chopped dates with 1/3 cup LSA and a sprinkle of sugar                                                             on top before baking.


    30 gr rolled Oats with 35 gr each of chopped dried apricots and                                                                  slivered almonds.


    160 gr of fresh or frozen blueberries with 20 gr chopped dried apple.


    190 gr sliced dried figs, 1/2 tsp ground cinnamon and a sprinkle of sugar                                                           on top before baking.

    I am going to try these with GF flour so my husband can eat them next. I have made them twice for my daughters, subbing blitzed dates for the sugar and adding banana and oats. The butter milk makes them so fluffy even though they are pretty much fibre bombs.

    These were ok. Had issue with the mixing in my raspberries so speed up to 5 but even on reverse the berries pulverised. Also did not include honey as it seemed totally unnecessary.

    Yum! I substituted GF plain flour, reduced sugar to 85g and made raspberry and coconut flavour. Worked great - will keep as my go to muffin base. Thanks!

    great muffins stuck to the pan a bit. Made mango & coconut, apple & Cinnamon, walnut, oats & date rasberry & white choc all yummy.  just need to mill the Raw Sugar before adding the wet ingredients
