Muffin batter

  • 230 grams Plain Flour (all purpose)
  • 145 grams Sugar (caster or other substitute)
  • 1 teaspoon salt
  • 1-2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 185 grams dairy free milk
  • 50 grams Canola oil (or other oil)
  • 125 grams Blueberries (this was frozen blueberries weight)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Preheat oven to 180 degrees celcius. Combine dry ingredients (Flour, sugar, salt, cinnamon and baking powder) in Thermomix Bowl. Mix for 10 seconds speed 4. 

    2. Add oil and Milk to the bowl and mix on speed 4 for 8 seconds. 

    3. Add blueberries to bowl and fold in using the spatula going around the bowl in the correct way to not cut up the spatula.4. Spoon into 10 cupcake trays (or more with less batter for smaller muffins). Cook at 180 degrees for 15-25 minutes depending on size.

    I used 1/2 GF flour and 1/2 oat flour. I added 1/2 ts xanthum gum. I used nutmeg instead of cinnamon and used frozen mixed berries. I used coconut sugar and heaped teaspoons of baking powder. I also added cacao nibs, about 1/4 cup.

    These are very morish and wont last long. I added some sultanas and used fresh blueberries and they turned out great. I did find i had to cook them a little longer, maybe i overfilled the cases (i only filled them halfway to 2/3).

    muffins didnt turn out like the photo but they were ok. Ok recipe to have on hand when im needing something to fill the lunch box and dont have any eggs (like today :P)
